Banana Cream Peanut Pie
Who else has been going a little nuts during this crazy quarantine? I know we are. There's only so many games of monopoly you can play and so many shows on Netflix that you can binge-watch before the house starts to feel a little... Stuffy. Well, let's freshen it up by adding a little fruit to your nutty-ness and going bananas with making this beautiful Banana Cream Peanut Pie!
It is irresistibly delicious and will bring a little ray of yellow sunshine to your kitchen while we all wait for summer to finally get here... For those of you who are lucky enough to live in warmer climates, it will bless you with a banana blast that is guaranteed to lift your spirits and bring a smile to your face. This recipe is a little involved and takes a nice chunk of time to complete, which is great when you need something to take your mind off of everything that is going on in our world right now. To me, life is feeling a little chaotic and I don't like the uncertainty that comes with not knowing when the quarantine bans will be lifted. I am craving the ability to visit my loved ones, to go out and see a new movie with my girlfriends, to get dressed up for date night with my husband at our favorite sushi spot, to browse around TJ-Maxx with my mom and sister, or to visit my best friend and meet her amazing little daughter who was just born a few days ago. That being said, I was able to have some fun making this super yummy pie and sharing it with my family that I am sheltering-in-place with. It was also fun to put on a cute little dress and some makeup in order to film the video, it made me feel a little more put-together and a little less stressed!
Ingredients:
Crust:
9 whole graham crackers
1/4 cup dry roasted salted peanuts
1/2 tsp kosher salt
6 tbsp unsalted butter (melted)
Filling:
1/2 cup granulated sugar
1/4 cup cornstarch
2 large eggs
3 large egg yolks
3 cups whole milk
2 tsp vanilla extract
1/2 tsp kosher salt
2 tbsp chilled, unsalted butter
4 large ripe (but pretty firm) bananas
2 cups heavy cream
1/4 cup powdered sugar
1/4 cup dry roasted salted peanuts
Equipment:
9 inch pie plate
beaters or stand mixer
large bowl
whisk
large saucepan
knife
cutting board
measuring cups and spoons
